Weeknight Roast Beef

About 11 a.m. yesterday, I realized I had no idea what we were having for dinner. After checking the pantry and freezer, I decided what to do. I had about a pound or so of stew meat in the freezer, so that's where I started. Here's my little creation:

Ingredients:
1 - 1.5 pounds of stew meat
1 can of cream of mushroom soup
1/2 cup milk
1 packet onion soup mix

Directions:
Put everything in the crock pot for the day. You'll have little pieces of roast beef in a yummy gravy at supper time.

We liked it. We have a hard time remembering to eat leftover roast, so this is a great way to have roast beef, with no leftovers. I served it with mashed potatoes (instant), bread and a salad. It was yummy!

Sounds good! I have a very similar recipe that we make once in a while. We have a ton of deer stew meat in our freezer, wonder if it would be any good with that...

Good for you remembering dinner at 11:00. It's usually 3:30 or 4:00 before it dawns on me!
