It's Thursday

And thankfully, Pearl is here to entertain the little kids. I'm not sure how I get stuff done some days, but today, we're off to a good start. I made Mocha Chip Scones, have started laundry, took a shower, uploaded some new pictures to Flickr and helped Pearl with her homework. Yep, that's right, our four-year-old had homework. Of course, it came home last Friday, and we just now are getting it done, but it is done now. It was a family tree.

Mocha Chip Scones (from Sandra Lee, foodnetwork.com)
Ingredients:
1/4 cup brewed coffee, double strength, cooled
2 tablespoons heavy cream
2 large eggs, lightly beaten separately
1 teaspoon vanilla
3 1/2 cups baking mix
1/2 cup sugar
3/4 cup white baking chips
3/4 cup chocolate chips
1 tablespoon heavy cream
White decorating sugar or sanding sugar

Directions:
1. Preheat oven to 350 degrees F.
2. In a small bowl, combine coffee, cream, 1 egg and vanilla; set aside.
3. In a large mixing bowl, combine baking mix, sugar, white baking and chocolate ships. Add wet ingredients to dry ingredients and work into a crumbly dough. On a lightly flowered surface, form dough into a 9-inch disk (approximately 1/2 inch think). Cut into 12 wedges and place on ungreased cookie sheet. Set aside.
4. In a small bowl, combine 1 tablespoon cream and remaining beaten egg. Brush tops of scones with egg mixture and sprinkle with sanding sugar.
5. Bake for 18-20 minutes or until golden brown. Serve warm with butter!

I actually saw her show when she made these, she used a 9-inch cake pan to get the shape for the scones right before cutting them. They are rich, but super yummy (and we even skipped the butter).
